New to Teltonika equipment.

I need to setup an IPSec VPN to a Sophos XG firewall at H/O.

IPSec VPN connection established - O.K.

Unable to ping either side. I do not know what is missing, firewall rule or static route?

I have other IPSec Sophos to Sophos working on H/O

Sophos has this configuration example that might help you:

If you're on newer firmware - only names or fields should look different (named differently or moved to another configuration tab, let's say - advanced). So stay patient and try to look for things that example is telling you to use in setting up this configuration.
