So, still troubleshooting my Movistar connection here in Spain, and I was testing a Swedish (Tele2) sim card just to see if I got Movistar as provider, however I don't seem to be able to see that in the GUI anywhere ? - any CLI method?

Hello,

I could recommend using gsmctl commands in CLI or SSH. For example, gsmctl -o will return the name of the operator that is currently used.
