I watched the videos on how to setup the RUT240 but there must be a missing step here.

where do I get the Sim card for service. do I just call verizon and ask for a data only sim card ? ( I am in USA and Verizon is the preferred choice in this area ). or do I contact some other service provider like Pondiot and purchase service from them ?

Indeed, a SIM card from any provider can be used for the data. It's better to purchase a SIM card that is intended to be used with a router, as all carriers in the US throttle the mobile speeds if you're sharing the internet with a mobile plan.

One thing to make sure, is to get a device that is certified to work on your carrier network. To find out which order code is best for you, please visit this sites' ordering tab.
